Season cooking
Our chef offers a season cooking full of dishes tied to the tuscan gastronomic tradition and italian too. A re-examination of tipical dishes with recreation however respecting always the tradition.

Fresh products
A cooking changes as the seasons change using only fresh products, exception done for spaghetti hard wheat cooked at moment "espressi".

Purchase
Vegetables fish and other products are bought fresh every morning at the general market of San Lorenzo.

Le mozzarelle (Buffalo's milk cheese)
They come fresh every day from Mandragone (Caserta) and the Buttared from Gioia del Colle (Bari).

hors-d'oeuvre and Salads
To tease appetize starting with classic hors-d'oeuvre as bruschetta (baked bread) guarnished with oil or salami or cheeses, going on with salads that can be eated as unique dish.

 

Many other products are choosen after a very selective search among small regional farms as "La Fungoamiata" (extra-virgin oil), "Effegi" (salami from casentino and vegetables with very special mortadella fron Prato), il gelato di Vivoli (ice-cream from 1930 one of the oldest Florentine ice-cream parlour).
Cakes are exclusively home made.
